I agree with Oliver, generally it will be a bit darker and so will not "look" like the beer you're trying to brew but will taste absolutely fine. I've brewed them years out of date, making sure I NEVER use the yeast (which I never use in any case). No problems at all, done it many many times. As per ...

In relation to your "psssst" analogy, I have found that the size of the "psssst" on opening sometimes is not proportionate to the level of carbonation in the beer. Some big "psssst"'s can be quite flat when poured into a glass and vice versa.

Butterscotch... Yeah it was pretty butterscotchy. The only thing more butterscotchy is a butterscotch lolly.

Cluster Hops 14g teabag.
Safale S04.

3 weeks in fermenter at 20deg.

The Bended Elbow in Geelong is a great pub for varied beers.

Ok chaps, I must now make a few points after tasting what I believe to be something made by a higher power than me. It has only been in the bottle for 10 days, but tastes like christmas.
I did not rack the brew. It was bottled after 2 weeks in the fermenter at approx 20deg.

both yeast starters I've done have been using 1 stubby.
1 CSA and 1 CPA.
500ml boiled water, 1tablespoon LDME, 2 tablespoons Dex, 1x stubby dregs.
After she's raging away after 3-4 days, make the brew and throw it in.
They've both worked very well.
I got a few hours lag, but both worked great!!!

Mash: (using TL's mash in the kitchen technique)
1kg Pilsener Malt
400g Flaked Barley
250g Crystal
200g Flaked Wheat (I'm using puffed wheat)
100g Flaked Oats
Boil:
2.5kg LME
25g Northern Brewer 60 mins
25g Northern Brewer 20 mins
25g Cascade 2 mins
23L final volume ...

I just scored 12 or so cans from an ex-brewer of out of date 2006/2007 Coopers, Cascade, a few Brigalow Ginger Beers and Cider, Blackrock Whispering Wheat, Cider as well. Can't remember them all. Am looking forward to throwing a few quaffers together with new yeasts.

Some of my brews foam when they contact the priming sugar when filling, some don't. Hasn't really bothered me either way. Haven't noticed any difference in the beers.
