Have any of you guys got a recipe for a sparkling ale? Either part mash or extract etc?? Havnt been happy with the one i had made a while ago and wana give it a better shot. I will be culturing the yeast also

Thanks lethal! How did you go with that beer? was it nice? also would you dry hop with anything? Is it a good keg beer at all?

Yeah mate it was really nice, i didnt dry hop but i suppose you could if you wanted to but it was pretty good just as it was and any beer is a good keg beer isnt it :lol: in saying that i didnt have my keg setup when i made this one so it went in bottles :wink:

I don't reckon you can go past coopers recipe i.e can of sparkling, can of malt, 500 grams of malt (dry) and some pride of ringwood dry hopped.

Am going to put this down either tonight or tomorrow. Was meant to do it ages ago but was doing other brews first. Just curious it sates to use 2 tins of coopers liquid lite malt. But i went out and brought a tin of coopers sparkling and a tin of lite malt. Is it ok to use these 2 tins and should i use less hops due to using the can?? or will it be ok to just leave it??

2.75 kg Coopers light liquid malt extract
250 gm. crystal malt (60° Lovibond)
500 gm Belgian candi sugar (white)
10 gm Pride of Ringwood pellet hops 60 minutes
15 gm Pride of Ringwood pellet hops 15 minutes
15 gm Pride of Ringwood pellet hops 2 minutes
1 tsp. Irish moss

If you are using the kit then no 60 min addition. The kit is hopped enough. As you can see below the flavour addition gives you an additional 6 IBUs so take that into account.

I am doing an AG CSA this weekend, 2L starter in fridge this morning to drop out the yeast slurry. If you are going to be cloning a Coopers beer, you HAVE to use their yeast and not the dry stuff.

The hop additions are -
17.00 gm Pride of Ringwood [9.00 %] (90 min) (First Wort Hop) Hops 20.9 IBU
10.00 gm Pride of Ringwood [9.00 %] (20 min) Hops 6.3 IBU
10.00 gm Pride of Ringwood [9.00 %] (20 min) (Aroma Hop-Steep) Hops

27 IBUs is prob a touch high but will suck it and see. Will be fermenting at 16C if i can get my hands on a fridge by tomorrow.

Thanks mate! I will drop the 60 mins addition out for sure. I culture the yeast. I have 3 longies of sparkling in the fridge ready to be drunk for the yeast. i love sparkling hope it will turn out sweet. Let me no how your AG goes as when im ready to do AG i will pinch it of ya

3 longies of CSA? Wow, i used 3 stubbies of CPA. Stepped up 250mL, 500 and then to 2L.

I allways thought you gota use longies?? Would it matter if there was more yeast??? Besides getting more lite headed from drinking them?

no difference between longies and stubbies except volume! 1 stubbies is enough as long as you have time to step up volume over a week or so to get enough yeast.

Plus, i use a stir plate so get more yeast than compared to the shaking method.

both yeast starters I've done have been using 1 stubby.
1 CSA and 1 CPA.

500ml boiled water, 1tablespoon LDME, 2 tablespoons Dex, 1x stubby dregs.

After she's raging away after 3-4 days, make the brew and throw it in.

They've both worked very well. :D
I got a few hours lag, but both worked great!!!

best part about making the starter is the excuse you have to have 2 longnecks back to back... ohh and the authentic yeast you end up with... dunno whether i'd be able to do the chimay blue double banger though... might cause a blowout..

Just make sure you tip off the beer into a glass, make the starter then knock back the chimays!
