well, I'm back from my trip, and I managed to find IHS at Beechboro road. They've got quite a good range. Didn't get to meet Neil, but spoke to a lady there (didn't catch her name)...if you noticed a dip in their hops supply, that was me :wink:

Hi all,
I'm making a trip to Perth in 2 week's time, and hope to pick up some things from there. Specifically, I'm looking for a bench capper, small airlock, dry malt extracts and lots of hops. Would anyone have a shop to recommend? Thanks in advance!

if you REALLY REALLY want this stuff, and you have the ability to control oven temperature reasonably accurately, I have the instructions somewhere for how to make it. Essentially, it involves sugar, in the oven, for controlled temperatures for certain times.

From my experience, 18 Deg C is the best temp to brew it. Any lower and fermentation gets stucked. If it happens, you'll need to bring it back up to 18 Deg C and rouse the yeast by swirling the fermenter. This was what I did for my last brew, and it came out fine.

Well, I've gone and added extra wort, the bitterness level has gone down to a more acceptable level. :D

Even with the current level of bitterness, I'm hoping it will mellow down as it is still harsh. The downside of this whole episode is that the hop flavour has reduced abit too.

is there a way to rescue a over-bittered beer? The IBU is about 45, which looks ok on paper. But wait till you try it out! Makes my lips all puckered up... It's currently in the primary fermenter and I was thinking of adding 3-4L of wort with the same OG to counter the bitterness. Does this ...
