Belgian Candi sugar

Post by keat »

Hi all,
does anyone know if the "Kolner Grummel Kandis" mentioned in this site http://pfeifer-langen.com/260.php is Belgian candi sugar? I don't read Belgian, so...

Na keat ya got it all wrong, it's written in German. It's a finer grade of caramel candy you might be able to find it in a european style deli, that stuff is pretty popular in europe so one of those style deli's would be your best bet. Any other questions feel free to ask, I lived in southern Holland for 20 years, about 5k's from the Belgian border and 10k's from the German border. Talk about beer mecca.
Cheers,

is this the same as carbonation drops or do they just add flavour?

Good question, I supose you could use them as carbonation drops but if I remember them correctly there about 5 to 10 mm in size so that would make it hard to get the right weight. To use with the brew I think it would be much easier to use Morgans liquid malt extract caramalt.

So you would use them for flavour when bottling then. What would be a good brew to use them in?

It's hard to know how much to use for priming. But if you want to use in the brew I would use it in darker beers to give that sweeter caramel taste.

I'm thinking of doing a belgian beer, which naturally calls for belgian candi sugar. Would this caramel candy work?

If need be, you can get Belgian candi sugar from Grain and Grape in Melbourne.

They do mail order, too.

Thanks for the info. Unfortunately, I'm in Singapore and they don't ship international. Even if they do, the shipping cost is higher than the actual product :(

keat,
if you REALLY REALLY want this stuff, and you have the ability to control oven temperature reasonably accurately, I have the instructions somewhere for how to make it. Essentially, it involves sugar, in the oven, for controlled temperatures for certain times.
In the end, I decided not to bother myself, but, hell, I have made a career out of taking the easy path :-). Where it was required (e.g. belgian ales), I have gone for various experimental alternatives, such as honey, golden syrup, ...

Hi Peter,
thanks for the advice, I guess I'll try with the "Kolner Grummel Kandis". Thats the only thing remotely close to Belgian candi sugar that I can find here.
