This is about my 15th brew, so not a novice.
A recent stout (coopers irish stout from premium range) is showing way too much froth no matter how I pour it.
My traditional beer mix is to add an additional 500g of dex, and 1KG of dry or liquid malt to boost gravity, alcohol and general ...

malt rules!
The difference between the standard kit + brewing sugar vs. a 2 kit brew (or kit plus malt extract) and a secondary ferment of 500 LDM is incredible.
My brew is at least to the standard of premium beer I would have paid $15 a 6-pack for!

... and could have me labelled a sexist but what do you think of being served by a female in a HB shop?

The Beer Bible
Anyone else had the chance to buy and read "The Beer Bible" by Willie Simpson? (Australian written and only just released)
Personally, I think you can save your money as it's a bit lightweight for the contributors to this forum.
There is a good insight into a number of international beers which he ...

new guy
As I started the thread, I won't name the store in question but he has been mentioned in previous replies.
I will give a bit of a boost to the country brewer in kingswood. Only a new store and the guy has a bit to learn but could turn out okay. Could use a greater variety of stock though.

HB shop owners attitudes
Quick question for the forum,
Do you find HB shop owners a bit on the forthright/arrogant side?
I like to experiment, do things the for the hell of it just to see they turn out. I cook almost the same way, and 90% of the time the results are great.

What type of malt would you recommend?
And if not bulk priming would I use the same quantity as with white sugar?

One thing I hate in HB's is the lemonde size fizz due to what I believe is the following problems.
1. The carbonation drops provided by Coopers are different shapes and sizes, therefore how can they be consistent?
2. Most bottles I can find are 650ml, yet the sugar shovels provided at the HB ...

First combining Coopers Dark Ale with Bavarian Lager (sensational)
The one laid down yesterday was Coopers Canadian Blonde * 2, with a a secondary ferment of 500g of Capilano's English Toffee syrup

Alcohol question
Yesterday I bottled a brew as follows;
1. Mix 2 cans of coopers blonde (nothing else)
2. Add to secondary fermenter after 10 days, mix in 500 grams of capilano english toffee syrup (flavoured golden syrup)
3. Bottle after 21 days
The brew is clear as possible, and the syrup has added a great ...

Wheat Beer Questions
Hi all,
Up to about my 10th brew and finding that double kits (no sugar) seem to be working well for me. Creamier texture, fuller body and better head retention.
My biggest disapointment so far has been 3 attempts at wheat beer. Crappy head, questionable taste.
