further thinking on that... what's the pH of carbonic acid? might be acidic enough to curdle the milk... fizzy cheese!

Now you mention it, I think that is what happened.. it just curdled instantly..

is it a reversal of the homoginaization process maybie?
pressure from n2O is a great way to whip cream. try the cream bulbs if you can find them and the lowest fat milk around... might work nice

when you mix cougar bourbon with milk it curdles... i tried it once cos i had nothing else to mix it with....didnt taste too flash

I'm gonna do it.... i'm gonna ferment some powdered milk i have at home and see what happens.. i have some champagne yeast lying around... and i'll add some dex..and Y nutrients... nothing to loose... prolly nothing to gain either... HA
