Now you mention it, I think that is what happened.. it just curdled instantly..

is it a reversal of the homoginaization process maybie?

pressure from n2O is a great way to whip cream. try the cream bulbs if you can find them and the lowest fat milk around... might work nice

anyhoo... having thought about carbonic acid and milk making fizzy curds and whey, i'm not sure i'm so keen on the idea..

when you mix cougar bourbon with milk it curdles... i tried it once cos i had nothing else to mix it with....didnt taste too flash

I'm gonna do it.... i'm gonna ferment some powdered milk i have at home and see what happens.. i have some champagne yeast lying around... and i'll add some dex..and Y nutrients... nothing to loose... prolly nothing to gain either... HA

I am unsure of the canned cheese stats from Mex down, but I assume there is a line somewhere, where consumption drops over the continent.
