bit more of an interesting thread than some would think - not so different to how ale was drunk before refrigeration - from fermenter to secondary , and served out of the barrel by gravity - carbonation was for the gentry, ale from the barrel for the people.

had my first one of these yesterday - absolutely brilliant beer - I thought it was low on bittering for a pilsener, and perhaps has some wheat malt in it - like to brew one thats for sure.

I use this kit with 3463 forbidden fruit yeast - a belgian yeast would be good, even the coopers bottled yeast has some charachter, or for dry, try T-58.

saflager s-23 as above is a good answer - gives a slightly fruity taste, so more charachter, and can cope with the more 'natural' temp swings you will get (as opposed to a brew fridge).

Best hop treatment i think is around 15 grams each of cascade and chinook - will be pellets, 1/2 dry hopped, 1./2 boiled for a couple of minutes and allowed to cool. +Mr magoo, its all about the yeast, you can get a muntons belgian ale kit from HBS, add a morgans dark crystal 1kg malt, a 1.5kg amber malt and add the yeast of your choice from wyeast and ferment at 24 or so.

Have done a partial or 2, and to be honest didnt come up to expectations- the speciality grain version I did of the same beer was far superior.

heh, AC, I just brewed something thats turned out quite a bit like a kolsch, it was a whispering wheat can (I think its all barley in spite of the label) added some LDWM and LDME (muntons) and used the s33 - hoping for some sort of fruity thing happening!

2nd option, its a proper lager yeast, so carbonation is prob best at 14c or so (although room temp wont kill it), and then lagering in fridge for month or 3 for a proper lager. Although the local breweries call their beer "lager" and run a 7 day turnaround!

Da-Damage, my kegs are cleaned and sanitised with hot water.

It is my understanding that any amount of bleach will pitt/corrode stainless steel.

jubjub, sounds like temp will be fixed next time, but also consider ditching the brewing sugar if you are after taste. The sugar adds alcohol only, for more body etc add either the BE2 or 1/2 BE1 plus 500grams of light dried malt.

paleman, i just skimmed a krausen for a yorkshire bitter, given that is the method used by the breweries who open ferment.
