Has anyone made this kit? It is 1.8kg and I have a safale k-97 yeast. Can ferment at any temp. I was thinking 1kg of LDME and 20g Saaz and 20g hallertau to 23lts.
I don't want to overpower the kit unless of course it is bland.
I see some people like to use fruit, but I'm not sure about that yet.
Any Ideas?
Thanks,
Jub

I use this kit with 3463 forbidden fruit yeast - a belgian yeast would be good, even the coopers bottled yeast has some charachter, or for dry, try T-58.
I add 500g steeped crystal (german or english, but avoid the4 Joe White aussie crystal malt), 1.5kg amber malt extract, 300g dried wheat malt, 200grams brown sugar, and brew to 18 litres.
Makes me happy.

Did this one with 500gm wheat malt, 500gm LDME, 200gm dex, 15gm Hersbrucker for flav and 15g Saaz for bitterness....sensational...was a true belgian ale....

Deutsches Reinheitsgebot: Deutsches Bier ist von Wasser, Hefe, Hepfen und Malz gemacht. Wenn nicht, DASS IST GAR KEIN BIER!!! Ich liebe Kuupers Koelsch und Frueh Koelsch.
I did one with 1Kg DDME, 500g yellowbox honey and 50g Carafa III grain (steeped in coffee plunger 10 min). HBS guy said kit yeast was good so used that.
Was trying to make a honey porter. Tried one last weekend after 3 weeks in the bottle. Was still young and rough-ish but it's gonna be schweeet in a couple of months. I got half a chubby thinking about how good this is gonna be.

All right, brain, you don't like me, and I don't like you, but just get me through this, and I can get back to killing you with beer. - H Simpson.
Candy sugar is sugar that's been heated in the presence of acid to "invert" some of the sugar. You also get nice complex caramel type flavours.JubJub wrote:Candy Sugar?
You can make your own candy sugar or buy it from grain and grape.
