Over carbonated - but with great results
ok, overcarbonated a fresh wort pilsner by at least 2 days by accident recently, with 40psi for 4 days got her pretty frothy to say the least,
but gave the beer a far superior head retention, and finer, smoother bubble/head after treatment
to remove over carbonation I did this:
left in keg at 40 ...

yeah cheers dr, i undertsand what you have said about the fatyak, i am not trying to replicate it with a pilsner, just want a little more hop
the fresh worts are good, just lacking that killer punch

IMO you should never dry hop a pilsner.
You are after a subtle aroma.......
And why are you fermenting a pilsner at 18C? What yeast are you using?
safale yeast, long story short I cant use my fridge tempmate at the moment, so cant get to 11 degC, so 18-22 degC under the house through summer ...

yeah I will add after head of wort clears of any bubbles and let sit for another week at least, apparently it hardens the trub a bit with its clearing technique so dont want to add to keg and push through poppets etc.

i used to rack into fermenter no2 like yourself, but didnt add water to dilute sugar, just dissolve in a little of the wort from ferm no1, say 2 litres, stir around a bit, then add some more, stir arround, then just add all of it and bottle. (no thrashing of the spoon to bring oxygen mind you ...

I bought some cryofine to reduce yeast haze in my keg beers. it only takes .5-1 gram per 25 litres.

filter, racking to second fermenter, cold conditioning, a mate puts in gelatin with some water into the keg first, pours in brew, mixes and leaves for a week or so, he reckons it clears it up. not many other options really

drinking 2 litres at a time, now thats certain need for a keg or 3
get a second fermenter as well, camping shops oe a hardware store have 25 litre drums with screw lids, just add an airlock, sometimes cheaper than the HB shop

totally agree with everything you have said
I brew mainly in glass carboys for this reason, far cleaner, I rack to kegs so it is easy to syphon from carboy to keg
cleaning with hard bristle brushes is a no no as well it can score the plastic and thus giving more surface area for the germs to form

must be a leak somewhere, I have had a 10kg bottle for a 2.5 years now, only half gone and many kegs drank inbetween
