howdy. been a while since i've been on here!
i've done a search but can't find a good link to a ginger beer recipe? keen to do one to accompany some nice rum over summer!
anyone have a good recipe?

I've got a reasonably simple one that has a good ginger bite. It uses the Old Fashioned GInger Beer kit which comes in a small cardboard tube and only seems to be available from the HB shops. I've tried all of them and I like this kit the best.
1 Old Fashioned Ginger Beer kit
2 tsp grated ginger
150ml lemon juice
1kg Dextrose
1kg white sugar
2 pk Coopers yeast (if you have it or just use the yeast in the kit)
Boil everything except the GB kit and yeast in 3 litres of water for 15 minutes
Add the GB Kit to the pot and mix well
Tip into fermenter and top up with cold water
Add the yeast (and nutrient that comes with the kit)
Ferment at 20C

Yeah it makes a great dark & stormy with a bit of a kick to it

could you use the cooper's GB kit with this recipe?
I just ask because I have this kit and from what I've read it's not good.
And I'm keen to get rid of it.

I think you'll be hard pressed to find many positive things said about any GB kit.
That recipe would improve the kit none the less. I'd used way more fresh ginger than that, but I like it hot. I'd also use the recommended raw sugar (instead of the dex and white sugar). You might want to chuck in some lactose if you don't like your GBs too dry.
But don't listen to me. I've only done 2 GBs and have been unhappy with both.
