my first 7 beers i brewed were K & K or K & B

the 8th brew i did was a st peters fresh wort kit czech pilsner

all my brews after (approx 20) have been st peters fresh wort kits, with the exception of the 1 ezybrew kit

my favourite is the czech pilsner fermented @ 17 deg with us05 + 4.5 litres water + teabag of saaz

i have/will brew these again, and rate them highly;
golden lager, aussie pale ale, five malt amber ale, heffweizen

i wont brew these again, just not to my taste;
norwest pale ale, amarillo ale, summer ale

i am lagering the 'lager' at the moment, was fermented @ 10 deg with w34/70 and seems to be coming along fine

i am also lagering the ezybrew cascade lager clone that was fermented @ 10 deg with s-23 six weeks ago, it has a home brew twang to it, so will lager for longer to see how it comes along

i do all the st peters fresh worts to 19.5 litres and find this leaves a perfect 18.5 'ish litres for a keg

usually 8 days at ferm temp (17-19 deg) then crash chill for 6 days and keg, no racking unless its lagered, they are cloudy, but i think thats chill haze because for the bottled ones, they are clear before chilling then go cloudy when chilled

none of the FWK have the home brew twang, even for the aussie pale ale that was done at 22 deg

i have been brewing for less than 3 months, and the FWK are the reason i didnt give up, i get fussy boutique beer drinkers drinking these FWK and they think they are fantastic,

make them up to around 19.5 litres, use a decent yeast, keep the temp under control, and you'll be drinking great beer in as little as 2 weeks if kegging for around $2 / litre

Hey thanks Don, heaps of good oil there, just put down a ezybrew LCPA . Have just put my 1st keg on, a coopers bavarian kk, its come out good, all i did was after fermentation transfered into 2nd fermenter and in the fridge for 7 days. Not spectacular but very drinkable and no homebrew pang or pong, so far so good, will give your czech a go next brew as i like this style of beer. Ta Turtle

I love FWK.

They always make a perfect drop even if the cost is around $1 per 330ml bottle. However, Id rather a good beer than cheap shit. The reason I started brewing in the first place is that Australian beer is (generally) terrible. I swear most beers they piss in a bucket of hops and then sell it as beer! My favourites are the wheat beers such as hefeweizen and pilsner's with a good wyeast liquid yeast. I end up with a perfect beer for a perfect night at very little effort!

Cheers!

Gassed and kegged Ezybrew Little Creatures Pale ale clone today, seems very dark, maybe they put the wrong label on the bottle cos it looks and tastes some thing like James Sq Amber. Anyway it doesnt matter cos its the best beer i've brewed, cant stop drinking it tastes great, no home brew pang or pong. I've probaly gassed it a bit on the lean side but i'd rather that than over gassed beer. I am very new to kegging, after it stopped fermenting I decanted it to another fermenter then put it in the fridge for 7 days I used the ross method sort of. Gassed 4deg keg to 350 and rocked on its side for 1min. Turned off gas and rocked for 20sec, gas back up to 250 then left for 24 hrs. Purged to 10psi and poured. It pours good but as I said it could probably have a bit more in it. Iam reluctant to try and put more gas in it as my 1st effort at kegging, ( this is my 2nd keg), ended up all head and was very hard to pour. Any way will be doing more Ezybrew beers and next I'll be trying an ESB freshwort. ChersTurtle
