Tooheys old and dark malt

I have just put my first tooheys dark ale brew down after several (increasingly successful) amber brews. On advice of homebrew shop I went with their stout booster mix of sugars/dark malt/light malt, rather than another one they had for dark ales which was a mixture of sugars and light malt only.

I love Tooheys old and like a nice brown ale but am concerned that this brew will be too dark and bitter like a stout because of the dark malt in the booster mix.

Any advice on what I can expect? Are my newbie fears unfounded?

Should be re-titled 'Newbie fears unfounded'

The dark dried malt will add colour but not bitterness and as long as you didn't boil a whole heap of hops for an hour or so and add it to your brew then that won't add bitterness either. Trust your HBS guys a little. Dark dme is light dme but a little caramelised so infact it will impart a little sweetness, but you may not notice it. I'm sure your Porter will be fine.

PS a dark can never be too dark IMO.

I believe that you will have a marriage made in heaven.

The Stout mix should contain about 600gm of dark malt, 200gm of dextrose and 200gm of maltodextrin.

The malt and dextrose will ferment out but the malto will only ferment out at about 30% and give you good body.
I am an old drinker and my favorite brew is the Tooheys dark ale kit, 1kg of dark malt and a teabag of willamette hops. It's the ducks guts!!!!

Also, if you want to taste something really interesting, try using 750gm of dark malt and 500gm of yellowbox honey.
