Ok, I decided it was time to do my 2nd brew. i didnt want to introduce any hops yet so i went to my homebrew store and had a chat. I wanted to do Sparkling Ale so i got a tin. On the back it recomended a mixture of light malt and dextrose but the homebrew guy told me to use the tin and 1kg of malt extract. He also sold be a safeale US 56 yeast. I thort because the sparkling is stronger i would need extra fermentables. Have I been steared in the rite direction?

1kg is a standard amount for a brew but if you want it stonger just check out the calc here http://www.liquorcraft.com.au go to the calculators link and simply put in amounts till you get the abv% that you require :lol: :wink:

I have a recipe for Coopers Sparkling but it sounds a bit too complicated, so I'll turn it into a kit and kilo for you:

* 1 Coopers kit, pref a bitter or sparkling, but pale would be ok
* 1 kg Light Dry Malt or tin of Light Liquid Malt
* 500 gm Belgian candi sugar (white)

That should get you up to the strength that you expect. The Belgian Candy Sugar can be bought at your HBS or can be made yourself from plain old white sugar.

If you use a pale ale kit, it would be better to use a tin of amber malt extract (liquid).

Use the kit yeast, and ferment between 18-22 degrees C, lower being better.
