Emu Bitter - Help needed

Post by Cookie »

G'day

I've had a couple of attempts at making EB and have not got anywhere near the real thing. I have used a recipe straight from the Malthouse website.

1.7kg ESB Malthouse Extra Bitter
1kg Beer Booster
25g PoR Hops (Quick boil pellets)
S23 Saflager Yeast.

I have placed the hops in a mug of boiling water for 30mins and then strained the liquid into the wort. I have then topped up to 23l and left in uncontrolled temperature (~20-32C) for a week, before bottling when I'm sure the FG is reached. I have now moved to a house where I've got an underground garage that will keep the temperature more consistent.

I have found the beer to taste as if the hops were used for aroma and flavour instead of bittering. I need to use the rest of my PoR hops and want to give this a real crack, as I've grown up on EB and I love it.

Any help would be greatly appreciated.

G"day Cookie
Many would ask why? But your taste is yours alone .
For starters i would get a 1.5kg llme and use it in a30min boil with your por hops
start 10g 30min 10g 10g@10min and dry hop another 10g into fermentor.
Your temps are way to high for s23 10-15c ferment larger yeast.
you would probably have to cold condition as well 4weeks min 3 months better.
If you like bitters do a search in recepies ,blokes on here more exp than i point
you in the right direction .
And yes im a W.A. boy raised on Emu Export :!: :!: :!:
Im not an alchoholic i dont go to the meetings !
