Slow Brew??

Post by Peter1959 »

Just after a little advice,
I have a Coopers Canadian Blonde, BE2, a splash of Yellow Box honey and Safale US05 brewing since last Saturday arvo. Haven't brewed for a few years, may be a bit rusty. From past brews would have expected to be bottling after 5 to 7 days but still have action in the airlock. Pitched at 22 and brewing at about he same. Haven't used Safale US05 before and wondered if it may be a little slower working?????

Thoughts please...... or am I just a bit impatient?

US05 is a very good clean fermenting yeast. It is not particularly slow, especially not at 22ºC.
It is very likely already done, and what you are seeing is residual CO² coming out of solution.
There is no need to be in a hurry to bottle. I never bottle before 2 weeks. It gives the yeast a chance to settle out more, and to clean up any fermentation byproducts. You'll end up with a cleaner and clearer brew.
I bottled an all grain Brown Ale today which I brewed 16 days ago.

It is a slow yeast relative to the Coopers yeast, but not that slow. Ignore the airlock- you will never get any important information from that. Stick to your hydrometer. Two identical readings over two days.
