How long is too long

Is it possible to leave a brew in the fermenter too long?
I was just wondering because i want to start a new brew, but am going on a holiday in a week, so it would be at least 2.5 - 3 weeks before i would be able to bottle, whereas my previous brews i've bottled after 1.5 - 2 wks.
Anyway as i'm relatively new to brewing, would this be too long to leave or would it be fine? Also it would be a Thomas Coopers Sparkling Ale if that makes any difference.

provided it's cool enough, that should be ok. too long, or too warm, and the yeast will break down when it's finished - which tastes nasty.

My brews normally sit around 20degrees. Is that cool enough?

my ales regularly sit for 2-3 weeks in primary..

I often do a batch before I go away on holiday, just make sure your around for the first few days to watch temps and top up the airlock.

18-20c is perfect. It'll be fine for 3 weeks at that temp.

I was worried i'd have to wait weeks till i could get another brew going.
