15 minute amarillo ale

Hi all,

I've just been watching one of the Basic Brewing vodcasts where they made an all-extract amarillo ale but only using a 15 minute boil. The recipe was basic - some LDME, some steeped crystal and then lots of amarillo at 15 minutes, 10 and dry hopped. I was keen to give it a shot, but am I right in assuming that the beer might not keep as long because it didn't get all the preserving goodness from the hops because they weren't boiled long enough? I was thinking of adapting this method for my next stab at a golden ale, but adding some wheat malt too.

I've watched a couple of their vodcasts and they are pretty informative. Not as technical as the Sanders brewcast, but at least they seem to stay on topic and there's no 1970's era mother-in-law jokes.....

I wouldnt think that there would be alot of bitterness with the longest hop boil at 15 minutes. :wink:

Plenty of flavour though. You'd need to add some isohop or something. I'd rather live.

from memory, to compensate they added a LOT of hops.

i really enjoy basic brewing radio and video... entertaining if nothing else, but great for getting ideas.

I watch and listen to basic brewing every week.. very informative and funny sometimes.

The 15 min amerillo has TONS of hops from memory to achieve a decent amount of bitterness.

His interview wirh John Palmer this week on IBU's was excellent.

BTW they spoke of John Palmer coming down for the upcoming Australian National Homebrewing Conference in Melbourne.

Wonder if the wife wants to go down to melbourne for some shopping arround then ... :)

If she did, she could also stop in at the conference - which would give you some time to yourself to get some serious brewing in! :lol:

G'day all,
In theory, a 15 minute boil will give you bitterness if you used plenty of hops. A 1.060 gravity boil at 15 mins yields 0.105 utilisation whereas a full hour boil yields just over double that utilisation, ie, 0.211 (Source: Palmer), and the utilisation "gap" widens as the boil gravity falls - to a point! So whilst you could say, I'll just double the hop bill, there may be other things to consider including DMS extraction and protein reactions in the boil.

Anyway, it'd make a fun quick and dirty brew and lets face it, anything with heaps of Amarillo in it can't be that bad!! :twisted:

If you don't like RealPlayer or Itunes you can download the .mov files and convert them to .AVI or some other user-friendly format.

I use Mencoder which is a freeware thing and it does a great job of converting these files so they play on my non-iPod....
