I have a Lilli Pilli tree out the back of the house and got sick of treading in fallen fruit on my to the brew house(shed), so decided to pick as much as I could and add it to a beer. Ingredients were:
can Coopers canadian Blonde
1kg coopers BE#2
2Kg Lilli Pilli
300g Dex
200g Organic Rainforest Honey
Kit yeast as nutrient
1L of Coopers pale Ale starter
boiled up the Lilli Pilli, dex and honey in 2L of water and strained into the fermenter then added other ingredients. Pitched the yeast @ 20 and brewed at 22-24. Pri for 9 days (would have been 5 but had to travel on business) then racked and CC'd @10-12 for another 9 days. tasted great when bottling will crack one in a few weeks and appraise then.

Okay, so it's only been about 12 days in the bottle but I was curious. Actually this is going to be a very good beer (if you like cherry tarts ) Still has like a typical blonde with the tart fruity aroma and flavour which is not too much. Will definitely get better with a little bottle time.

Ours (a friggin street tree, if you don't mind. What a stupid choice) are about to come into season and I wouldn't mind making use of the annoying beeries rather than just having them trodden into the house.
I had planned to keep this a little longer before a further tasting (as I now have a good stock of others that require my attention!). But in the interest of science/beer, I will stick a couple in the fridge and give them a whirl tomorrow. I will keep you posted.

Sorry for the delay, but a new job has kept me away from the forum. Well to the blonde............ It was a little over carbonated................ A little perfumed on the first pour (tallie)...................... Still like a blonde.. Sort of....................... Mix in the sediment for the final pour and Roberts yer uncle.................... All in all not three bad, but I think that the wife likes it more than I.................. I will resign this one as a Girls beer.........

I have since found out that the tree is actualy a Acerola or Barbados Cherry. So that stuffs the name of this beer. After reading about the fruit and its vitamin content here: http://www.herbsarespecial.com.au/free- ... herry.html that this beer will be good for warding off the common cold and chasing down those free radical fellows. Ha..... I always told the wife that beer was good for you!!!
