I had a strawberry tonight and it really has turned into one of my best.
It has a very good mouthfeel and the flavour is not too strong. The aroma is not as potent as I thought it would be.
The neighbours think it is wonderful and it has improved out of sight in such a short time.
I have managed to "save" 10 longies for Easter..........

Mine has also improved over time but is still not as good as i would have expected, very drinkable though and im sure it will get better with even more time, i will probably save mine for next summer and as it will be about as good as it will get by then

I made a Raspberry blonde last year.
I heated up the berries like said above, and blended them all.I put about 800g raspberries in the primary and 500 in the secondary. Turned out alright, but I forgot to put in that little strainery thing in the tap when I racked it, so heaps of berries went into the bottles. Everyone laughs when I pour this beer with a tea strainer!
It turned out alright, both sweet and sour. (I reckon strawberries will be sweeter)
A big mistake was adding some cascade hops, which I reckon spoiled it. I am right off cascade now. It's a hop I will rarely touch now.

Dry at start when nice and cold and sweet at the end. Must be the temp affecting my tongue.

Going to do the same as the above recipe but with Cherries, frozen this time like Dogger said.
Do you think I should steep for an hour or just pasteurise them like Dogger said?
Also 500g, 750g or 1kg?

It has turned out nice beer, a little sweet, but looks and smells really fruity. It's a nice deep red colour. It is still a bit young though.
Absolutely no taste of cherries at all , but that may have been the frozen cherries
I think next time I will buy fresh and rack on to them.

Guys, I am looking at doing a raspberry/Framboise beer in the same sort of style of this.
From what I have read about this - it is best to add fruit after a ferment, to either a primary or secondary. So, leave it for 7 days, and then blend the fruit to a pulp and then add fruit for 48 hours. I believe when I do it I will add to the primary and then rack to a secondary after 48 hours to remove the seeds.
The recipe I intend to use for the first go is:
1x Can Whispering Wheat
500g LME
A noble hop - probably Tat. or Hal.
150g Blended Raspberry
I have heard that Wyeast 3056 is the go, but I havent seen it from by HB shop - does anyone know where to get it, or recommend another one? I was also considering a second attempt at this, and using a champagne yeast and a dry enzyme to get that crisp taste coming through.
Thoughts?

Coopers Blonde
1 Can Morgan Liquid Malt 1.5kg
Standard Yeast
In Primary for 7 Days
22 Litres
Boiled up 2 Kilograms of strawberries.. from Aldi 99 cents a Punnet. Stalk taken off.
Strained into another Saucepan after mashing with Potato Masher.
Boiled Again until Liquid was approx 3-4 Litres.
Added Strawberry Liquid to fermenter after racking Primary beer into said Fermenter.
Left for further 7 days and drained into 19 Litre Keg ready for drinking, rest was bottled. When I racked into kegs I put a stocking at the bottom of the hose to catch and residual Strawberry bits...worked a treat, the bottles would have some floaties, but I do not care........
Strong Strawberry aroma, extremely creamy mouthfeel.
I'd recommend this to anyone who wants to have a go at this. It is a bit of work, but worth it IMO.

Lychees have a strong sharp flavour and while I like them as a dessert IMHO they would be a disaster in a beer. I once had a go at making a beer with quince's which are strong in flavour and sharp in taste. The airlock foamed for 24 hours straight and nothing but time would make it settle down. Initial taste wasn't to bad but after a couple of weeks the quinces took over, into the third week it was undrinkable, I have a mate who loves beer that much he would suck it through a dirty sock and even he wouldn't touch it after the first sip, so you guessed it it got tipped.
