quickie question
Ok so my coopers larger is 7 to 8 days old took a reading of 1010 yesturday. now whan i get home tonight if it reads the same can i bottle? or should i be leaving it a bit longer yet?? It has stopped bubbling, still condensation on top but the head has also died off... took a taste was a bitter... so agin bottle or leave it another few days for saftey???
Re: quickie question
If you have another reading of 1.010, and after 8 to 9 days in the fermenter, you'll be OK to go ahead and bottle.
However, my own practice (admittedly for AG brews) is to leave my ales for between 2 to 3 weeks before I bottle them.
The reason is that although the fermentation is over, the yeast continues to slowly clean up after itself and get rid of fermentation by-products.
Have a look at this page 8.2.3 from Palmer's "How To Brew", particularly the last paragraph.
