VERY alcholic beer

Hey all,

Im new here! reading through tho, great site...

Can some one give me there fav recipe for making a HUGELY alcholic beer that still tatses good and isnt stout?

COOPERS ORIGINAL Lager
Dried Malt - Light 500g (1kg??)
Malto Dextrin 1kg

Will that combo work? And be a much stronger beer??

What's your definition of a "hugely alcoholic beer"?

Trappist ales can easily go to 9-10%, however I reckon they're a bit of an acquired taste and aren't really sessional in the slightest. Is there any particular style of beer you're looking to make?

im looking at around 7 t0 8 % ish

and as long as its not stoutish or super bitter im easy

In my experience, trying to make a high-strength beer normally means having to sacrifice the flavour. It's easy to go out and throw two kits and a kilo of dextrose into your fermenter, I just find that it's not that easy to drink the end-product.

Adding alcohol content to your beer is easy, though. Just add more simple sugars. Dextrose is probably the most commonly used simple sugar in brewing and is pretty much entirely fermentable. The problem with dextrose is that it thins the body of the brew, so you could balance that out with maltodextrin which is much less fermentable so counteracts the wateriness that dextrose brings to the party.

You could also try adding a large amount of malt extract (liquid or dry) but, as malt is only semi-fermentable, it tends to add some residual sweetness, so if using in high quantities you'd want to be adding some extra hops to balance the sweetness out.

Brewing beer is all a balancing game, at the end of the day!

Seven to eight percent puts it squarely in the range of a Belgian strong ale. Check out this thread... http://homebrewandbeer.com/forum/viewto ... =11&t=2031

You could also try an IIPA; however these tend to be pretty bitter. The following is basically a regular IPA - it comes out around seven percent and packs a punch in the flavour stakes without being massively bitter.

A big, hoppy beer. An imperial IPA using english hops.

IIPA
2 x tins Coopers Lager
1.5kg LDME
Hops
20 min - 15g each of Fuggles, EKG and Styrian Goldings
10 min - 15g each of Fuggles, EKG and Styrian Goldings
0 min - 25g each of Fuggles, EKG and Styrian Goldings
Dry hop - 20g each of EKG and Styrian Goldings
Yeast - US05
Top up to 20L for OG 1.078, IBU ~ 70, ABV ~7.5% (these numbers are my best guess as its hard to work out utilisation with such a small boil volume and so many hops - the bigger the boil the more accurate the guesstimate you can make using beersmith). See the link above for information of doing a small boil for the hops.

This is the kit version of one of my beers. I haven't made this version, i simply converted it back from my AG recipe for the kit brewers here who had been asking about it.

Might punch out an extract version of that @1060-ish. Discovered flaw(s) somewhere in my AG/yeast splitting process and gonna take a step back until I work out what the problem is and what to do about it (and also get together some better gear (not a poor tradesman blaming his tools)).

1 kit 2 kilos of white .. been making it like that for my beer swilling mates for 20yrs..

Hate the tast of dex, white makes if rather frutiy so just for shits and gigles ill chuck in some amarilo ..
I dont bother using LDM or anything for my mates they cant tell teh dif and at 5 bucks a bag bugger them..

Yerp 1 kit 2 kilo turns out good..

1 kit 3kg good to keg but must be drunk wiht in 3 weeks or will turn into fortafyed wine then the only way u can drink it is with lemonade unless ya like the taist of fruitygordo cast wine cross metho ..
lol not that bad but bloody good to bring out after a 12 rounds .. have the boyz rolling on the floor LTFAO becose when they drink it they make a face like there just sucked on a lemon..

Funny thing is thou beeing big touff blokes no one has ever stoped drinkin it thou.. hahahah :twisted:

if ya bottling the stuff its the operset cant dink it before around 3 months but also must be left in the fermenter for a month so ya dont blow the ass outa bottles ..
oww and add 2 packets of a good yeast like SAF or somthin

Well there ya go thats my evil rocket fule send ya mate home in a taxi to face his miss's Home brew

PS exspect a phon call the next day from anyone thats not used to it for some strage res ya wake up more wasted then when ya went to bed..

I like the sound of the two kilo of sugar one....
you wouldnt add any brew enhancers? even simply like a coopers enhancer 1?
What kit have u seen working the best for this recipe??

Coopers Brew Enhancers are sugar. They are simply a mix of different quantities of different sugars (ie. x % malt, y % dextrose, z % maltodextrin, etc) made up to 1kg.

ah ok... so no need then... just trying to add something to the sugar to make it less thin, more body and head...

Most Kit & Kilo brewers use either 1kg Coopers Brew Enhancer No.1 or 1 kg Brew Enhancer No.2 per can of whatever goop. The No.2 gives better body, mouth feel and head 'cause it's got more malt in it. You use these INSTEAD of plain sugar or dextrose. Why not try 2 kgs (that's 2 boxes) of the No.2, with either a can of Coopers Real Ale or the Coopers Draught? That would be as simple as and should pack a punch! :wink:
