Chilli Beer

I'm so excited about my chilli beer, I just had to post and let everyone know how clever I am! I brewed a K&K Coopers Mexican Cerveza about 3 months ago and just put one bird's eye chilli into each of 6 long necks. Tasted one last night - and although I haven't been a beer drinker until I started HB - WOW! Bloody fantastic! Went really great with pizza. The 'heat' didn't block the beer taste at all - just left a nice warm glow in the mouth. Must make some more of those! Anna. 8)

mmmm sounds nice.

There was someone on AHB who brews a chilli lime beer using a Cerveza kit + chilli's and kaffir lime leaves. I've always been tempted to try it but 23L is a lot if I don't like it.....

You could put the chilli AND the lime leaf in the bottle like I did! That way, you wouldn't stuff the whole lot - just try a few bottles to begin with. :mrgreen:

I like this idea. I've been toying with the notion of brewing a chilli beer for a little while now, but so far I've held off in fear of spawning some sort of capsaicin-fueled abomination. If I only add chilli to a few bottles, at least if it goes pear-shaped the whole project won't be a total loss.

Anna, can you tell us a little more about the chillis? Did you sanitise them first, and if so, how?

I just chucked them into a cup and poured boiling water over them and let them steep for a few minutes. They were bird's eye chillis - the little hot red ones. Then just pop one into a longneck before you fill it (go easy though - tends to foam up a bit!). Hubbie was very sceptical but he was amazed at the result a month later. Gets hotter the longer you leave it. :twisted:
