Yeast and beer
Hi been a while since ive been on here but was wondering if anyone knows what would happen if you make a double brew in a 60 litre fermenter i make them at 45 litres and i think i may have only put in one 11.5 gram packet of safale yeast i think i should have put two in im wondering what effect this will have on my beer i used 2x coopers draught and 2x brew enhancer 1 and made up to 45 litres. Maybe drinking while brewing is not such a good idea but if it works out alls well, id appreciate any advice. Thanks

I can't really tell you what'll happen either way but it sounds like that might not be enough yeast.
Try searching for "under pitching" (and variations) and you should get the worst case scenario.

mistakes happen for a reason,
1. you learn from a mistake, or 2. it works and you fluke it
time will tell mate, let it go a little longer in the fermenter than normal to be sure perhaps

Depending on the viability of the Safale yeast, you may have a pretty lengthy lag time before the yeast starts the attenuation phase and bubbling CO2 out of the airlock. Next time, I would recommend using 2 sachets for a double batch. Hopefully the yeast is fresh and you'll end up with a decent fermentation - but home brewers are notorious under pitchers and it's often the reason why many batches don't work out as expected - we ask too much from the yeast.
If you only pitched the yeast in the last day or two, there's no reason why you can't take the lid off and toss in another sachet, if you want to play things safe - tossing in another sachet won't ruin the beer but an overly long lag might result in wort infection...
