I made this as an attempt at a sorta Coopers Pale:
1 x Tin Coopers Aust Pale Ale
1kg BE2
250g wheat malt (60min mash)
100g Crystal (mashed with wheat)
15g POR @ 10mins
Kit yeast
It didn't go exactly to plan - the wort from the grains was only boiled for about 15mins (cos I added the hops too early) and then I (without thinking) topped up the boiled wort with some extra runoff from the grains. It was only meant to be a keg filler hence the BE2 and absent-mindedness....
But - after fermentation for a week I gave it a taste. It had a slight sour taste to it which I assume has come from the short boil and addition of unboiled sparge water. I just gave it a quick smell and it smelt almost like a wheat beer in there.
What have I made? Any advice on what I should do with it? It doesn't taste unpleasant but I'm concerned that the sourness will increase over time. I was tempted to chuck it in a cube and leave it under the house for a few months to see what happens to it...

It is possible you have introduced an infection when you topped up the boiled wort with the run off. I don't think 250g of wheat malt would give an obvious sour flavour to the beer, not with 100g of crystal along side it anyway.

Yep - thought so.
Might see if it sours some more and make a lambic out of it.....
