Hello all,
After just getting Fridgemate wired up on Monday, I will be embarking on some brewing in the fridge @ 12c. Was reading the instruction on the Fermentis Packet and says to pitch 2 packs of Lager yeast for your 23 ltr brew -
1. This is obviously due to lower fermentation temperature(right or wrong)
2.My lovely partner bought a can of Coopers Mexican c.v and B.E 2, when at local HBS i only bought 1 packet of lager yeast, will it be ok to make up the brew and pitch 1 packet of Lager yeast(11.5gr) and the kit yeast(7gr Ale/Lager blend)?
Or should I just grab another pack of lager yeast and pitch 2.

If you pitch at 20C one packet is plenty.
If you pitch at 12C you will need two.
If you pitch at 12C you will need two.

I will say in your case it won't.

If you use one pack at 12, you'll get a longer lag. Whether this causes any serious effects is really pretty much up to chance (and how good your sanitisation is). If you want, you could always make a starter to boost your yeast population and activity, but it'll take a couple of days to do that.

Longer Lag Time = Increased risk of Infection??
In what case would pitching at the 2 different temperatures make a difference? Is it if you do Extract or AG?
This info I receive all goes in the Memory Bank..

the catch-22 is that making a starter also increases your chances of infection... but with good sanitation, you should be fine.

Certainly in an AG brew it is a lot easier to pick up on these sorts of flaws.
In a K&K brew not so much to worry about

This is not to say you can not produce a good Lager from a kit. I have made many, and despite what people say about HB lagers, I do believe it can be done well without adding any fresh grain (though this is of course the prefered method). I do think extra hops are crutial!
