Gday guys, My first attempt at brewing has been bottled for 4 weeks now, I did the coopers mexican. At first taste it is very nice but when it settles in the mouth it becomes very gassy almost like soda water, when it pours has a nice head and a lot of bubbles through it from the bottom of the glass, the head remains throughout but gets a little thin. Do you think this is still immature or have i stuffed something up somewhere. Thanks guys any help will be appreciated. :lol: :lol:

Brew enhancer 2
500gm Dextrose
2 weeks in fermenter
Around 22- 24 degres
Carb drops

OK A few things that might help.
Read the sticky http://www.homebrewandbeer.com/forum/vi ... php?t=1966
That will give you lots of tips on how to improve your brew.
Try to get away from using dextrose and use more malt.
And don't worry too much. Your brews will only get better. Better than the crap you would normally get in pubs.

Next time add in some hops, those mexican beers can be bland as hell.
Who ever said nothing was impossible, never tried to slam a revolving door....

hmmm I think they are meant to be bland... thirst quenchers.. not really beer "as we know it"

about ~2 years ago i did a couple of the coopers cerveza.
I found also that the bubbles were large / gassy etc.
1st with brew enhancer 2 as coopers say,
and 2nd with mostly malt + dex + hersbrucker hops.
Imo this beer don't need any extra body for the style.

My .xls notes say it was nice but nothing like corona,
and malty both times ? ( and gassy ).
Remember that they tasted OK over the beach....

Re: other comments,
Yes find I can't drink corona anymore.
Though a real watered down canadian blond Ale,
similar to Dogger's is nice in similar gastronomic
circumstances.

i did this as my second brew with 500g LDME 500g Dex and 20g tettnang. I too used carbed drops, and i found the same thing, that it is really fizzy.

Could it be the Carb drops, coupled with the thinness of the Mexican cerveza whcih lead to such evident fizz?

The tettnang hops worked real well the the kit though.

I have made a Coopers Cerveza with a Kg of dex and I think the kit needs a bit more hops flavour. Even corona has a mild hoppy after taste.
I currently have a Chairmans Cortez Cerveza in the bottles maturing a bit. This kits to me has a better taste and smell to the Coopers one. Hopefully it will come out a good lawnmower beer, which is the only reason I would make a cerveza.

Is the Cooper's Cerveza a lager or an ale?

I find that the 'lighter' Coopers beers (blonde, draught, lager etc) are much better as lagers than ales.

Granted, they still don't do much for me generally.
