Flop brews- brews you disown

Got a little bit too cocky and tried a recepie sourced off the net, was confident since my previous 20+ brews have all behaved, [ thanx you lord], laid this down- coopers stout mix, 500grms dark brown sugar, 250grams lactose, 1kg dried malt, steeped 250g roasted barley +flaked barley. Result...... a stout that resembles ribena with the added inhibitives to encourage a re-amergance of the poor soul who may have ingested this , of their previous stomach contents. i should have known disaster was immenent, it fermented like mount kracatoa, made a mess every where. Lesson learn't, ill stick now to the proven. Can u top that crap brew?

see the thread about a milo stout, and pay attention to my updates in the future. it may be worse.

i reckon those ingredients aren't too far off there... need some extra bittering hops, and you'd have to pick a decent yeast and keep the temp down, but i'd think it could turn out alright :lol:

i made a beer that started out as a hoegaarden cloney sort of thing, but then developed into my own stronger creation.

23L Final Volume
3KG LME
1KG Wheat LME
650g Honey
500g Puffed Wheat
500g Dextrose
25g Hersbrucker 5.6%, 60 Mins
10g Tettnanger 4.5%, 5 Mins
20g Dried Bitter Orange Peel
20g Ground Coriander Seed
Wyeast 3944 Belgian Wit Yeast
Coopers Yeast in boil


it finished cloyingly sweet, with too much coriander and bitter orange peel flavour. it was also very tart with all the wheat. given some time to mellow though, it's turned out pretty nice, like a belgian strong ale crossed with a hoegaarden. it's just hit 3 months in the bottle now.

oh, and i also tried putting some black jelly beans in bottles of a really early kit stout i made, 2nd or 3rd brew. nasty.

I made a Malt Shovel pale ale on the 23/6/07. 2 cans to 22 litres as per instructions on the can, the result - watery, piss tasting dish water. I dont like tipping a brew down the sink so i perservered hoping it would get better after a few more weeks, but down the sink its going, major dissapointment :cry:

I think its thanks to you guys that i havent made more mistake that what i should have by now...

I've decided to stick to the tried and tested brews (pale ales, a couple of wheats, lagers), i dont think i'll ever try to make a ginger beer with the coopers GB kit... that just tasted like extra sweet piss... I dont think i'll ever try to make a strong belgian ale without first doing my homework... 25L of 10% underhopped beer.... that'll take a while to get through

And from now on i'm gonna do a 12 L R&D batch if i ever want to try something new, cos i'm sick of all this shit beer filling up my store room...

I'm hoping beersmith will put me on the right track..

the ag pils i have in the fermenter atm is fkn' 'orible. had a 3 day lag before the yeast kicked off at 22 degrees , firdge mate got it down to 12 degrees, its been fermenting a week and tastes a little sour and buttery, just plain crap, i'm goona turf it i think and start over.

I have to admit.... i've never had a Failure as such... well not one big enough to put down the drain... the beers just havent turned out like what i expected....

I put down an all malt Thomas Coopers Sparkling Ale. Pretty simple brew. Somehow got infected, possibly from the yeast and was half drinkable. Thought it might have got better with age but after about 18 months I think it has got worse. Couldn't bring myself to tip it down the sink.Found a mate who can/will drink it so I gave a case of stubbies to him. I think I still have some longies laying aroud the garage somewhere. Might try it again in a few months time.

a Stout...

after leaving the tap open whilst pouring the Kit in (Mmmm... black goo) I made too much leaving it very thin and watery. On top of that, it was overcarbonated. And not just for a Stout, it was overcarbed for a wheat beer!

Funnily enough I nearly did the same with the last brew I put down. For some strange reason (I never do this) I decided I better check the tap and sure enough it was wide open :lol:

Moral of the story is I will now check the tap every brew!

On my 1st brew (a kit n kilo) the yeast didn't kick in so I threw in baking yeast - dare I continue the description?

I did a Cerveza kit but I couldn't keep the temp down as it was November and I didn't have any temp control at that point. The pineapple esters were so distinctive I might as well have chucked a couple of kilos of pineapple in.

Mine was a Cascade Spicy Ghost thrown on top of a Wyeast Belgian Wit trub. Although I suspect that was more to do with infection than anything else.

My Disappointing Lager!

It was Cascade Golden Harvest lager.
Added a Brewcraft kit, can't remember which one.

Not sure what I did wrong, it was an easy brew but it had nothing, no carbonation, watery, it just wasn't beer worth drinking. I haven't tipped it but can't bring myself to try it again. It would be at least 18 months old.

Let's just say - Disappointing.

I haven't tried a Cascade kit since.

Have done the Cascade Golden Harvest twice and dissapointed both times. A really bad kit twang to it.

Spicy Ghost twice too and the basic kit was better than the one i spiced up!! Although i thought it may have been infected. No visible signs or smells just bad.

My first partial, done at a big brew day. Initial tastes were so good, I was licking up any spilt wort. Once i transferred to the secondary, it got some buggerized flavour, and is now sitting in my garage... hopefully improving, but we know that's not gonna happen. Sob Sob Sob

Oh Boonie, how right you are. I think my perception of "steeping" is at a much higher temp than what it should be. My pop always used a massissive stainless thermometer when he was around to be sure, i went by sight, judgiing just below boil. "Keg" commented on the temp, and yes it was laid down a little high. As for me, (after a night on this brew), missus now lets me into bed, I'm now now allowed to use her computer (even though it's in my house!) and i think any future recepies i'll source here .(For those wondering the hangover was gale force 10 from - mixed with premium home brew)
