This recipe is designed to accompany burgers (to go in the bun) but it's also good with steak, sausages, etc. The yield is not great (about 1 cup), you may wish to make a double batch. I reckon it would work with any beer that isn't too dark. The onions readily take on the flavour of the beer - awesome. It may sound like a lot of work for an onion, but it's worth it.
Ingredients
1 tbs unsalted butter
1 large onion sliced thin
1 cup beer
1 tsp white sugar
1/2 tsp salt
Melt butter in saucepan over medium heat and then add onions. Stir frequently until tender (6-8 mins) without browning. Add the beer, then sugar and salt. Drink the rest of the beer in the bottle. Cook, stirring occasionally, until the beer has been absorbed and onions have browned lightly, about 16-20 mins. Serve.
Suitable for refridgeration, keeps well for a few days.

Beef braised in beer
No-one seems to be posting here but thought this recipe would be a good one, could easily swap the guinness for a HB stout. Actually watched the show where he made it (I was living in pommie land up till 2 months ago) so i gave it a go. Tastes really really good. I didnt bother with the dumplings, a good mash and some greens and jobs done. Will try this one with some coopers stout (I only brew ales/lagers) or a dark ale maybe.
Will give the onions and beer a go on the barbie, sounds like a winner!
