Well, 48 hours on & my brew sat like a big bucket of brownish water. OG is 1.046 same as when I started. I bit the bullet & pitched a CPA starter I had prepared earlier.

I have a real problem with leaving a brew sitting doing nothing for 48+ hours. I have never had an infection but this seems to be the best way to catch one!

Still, I'd love to hear from anyone who tried this & ended up with a decent brew.

Well, I'll let you know, though my lag time was more like 36 hours. Mind you I did make a starter out of 3 longnecks worth of yeast, but only left it for 10 hours or so. I'm considering pitching a Coopers homebrew yeast when I rack to make sure it's fully attenuated.

Your lag times are way to long folks and you are inviting trouble.

I would suggest that things will be OK but you really need a good healthy starter or a 15 g package of hydrated dry yeast to make a good beer.

Believe me, I used to screw around at low levels of yeast, but after trying a big health pitch I was convinced.
