Well i went and bought a book on how it is done..
there is as many variables as brewing beer..
I gonna go for just a clean spirit at the moment and use the mixers. With an idea of making my own rum and corn whiskey down the track.
There is definately an art to it.
And you can still an unhopped HB to make a form of scotch whiskey. Will try that out.. worst case scenario, you can make some molitove cocktails if it tastes like shit. LOL

i AM A NEW DISTILLER. I have looked at designs from the world over, lots from the Kiwis and america, however I have looked at the Scandinavian methods too. I found a still made in OZ called the 'Ultrapure Still' made by Puredistilling Co. (E drink@puredistilling.com.au) It makes you 4 litres of 92% from a 25 litre wash. Try and beat that..anywhere. I have no affiliation to the company, I just reckon it's the fastest, easiest, safest way to make 12 700ml of quality spirit a fortnight. But unlike home brew beers, the end product using wood chips for the various bourbons, and other subtle flavours, even Baileys is simple and safe, and....cheap, and tastes better than the commercial alternative. You won't get rich doing this, if this is your motive. As a hobby, and in a search for absolute top quality, this is the way to go. Most of us who distil at home, sling a couple of bottles to mates, pay for the sugar, yeast and essences, and live a life enjoying great bourbon (For Me). Crazy that it's illegal. No one gets hurt, saves a few bucks, thats all, Isn't that the Australian Way? My advice mate is to talk to puredistilling, find a stockist near you and ask to see how they make their samples out the back. I'd back it in that they are using the puredistilling product.
