Out of date cans

Post by Matt Wilbur »

Hey - havent brewed for ages and just got back into it. Had a Coopers Canadian Blonde which was a couple of years past its use by date but thought I would use it anyway. Pitched a safe ale yeast which was in date and added a Brew Enhancer 1. Topped up to 18L. I had a container of honey, I really should have added that but forgot about it. Any how to the point, it has now been bubbling for over 2.5 weeks. I checked the specific gravity today and it's still at around 1020.

I am thinking there mustn't be enough nutrient for the yeast? Question is, what do I do now? Leave it? Rack to a secondary fermenter? Pitch another yeast? Add nutrient? Chuck it all down the sink?

Any advice would be welcome. I want to start building a stockpile.

Except for the tipping one I guess they're all viable options. In regard to the nutrient I'd really only bother with that if pitching more yeast but even then I'm not sure that would be your entire issue. I'd try to make sure the brew wasn't too cold (20 to 22C at this point wouldn't hurt your batch any) and swirl the fermenter to get some yeast back into suspension (or rack it to another fermenter if the swirling doesn't work after a day or so) and see how she travels before re pitching.

Good luck with it and get that idea about tipping it out of your head now.
