As mentioned above, fermentation of the sugar by the yeast is anaerobic (doesn't require oxygen).

In fact, from what I remember in chemistry:

C 6 H 12 O 6 > 2C 2 H 5 OH + 2CO 2

cracked the first of these open last night to try. I marked the bottles in order of bottling so I could figure out which would be affected the worst (those bottled last, as more acetobacter in them).

I'm not a lawyer, but I was told when buying my still if I keep the condenser seperate to the "body" it technically isn't a still and therefore isn't illegal. I was always under the impression it brewed slower because cider is less viscous than beer, so more of the yeast sinks to the bottom where it becomes inactive. The high brewing temperature probably meant rapid yeast multiplication so it never had a chance to sink before fermentation was complete ...

try adding a litre of pear jucie as well. From what I remember this is meant to make a sweeter cider with a better taste than just adding lactose :)

My favourite is the Blueberry Schnapps :) More expensive than the whiskey/rum but is definately worth it. The Still Spirits Whiskey is pretty sweet as well, very caramel-ly

I would assume (never tried it though) if you take apple juice and keg it, then carbonate it you would have non alcoholic cider.

Not sure if it would go off without preservitives though.

food grade plastic is fine.

For about $3 you can buy 1125ml plastic bottles from many Homebrew shops. Not only do these hold as much as a Still Spirits flavour bottle makes, but they look pretty cool as well :)

I took Atropine's advice, and after 24 hours the scum has returned however it is nowhere near as bad as previously.

I shall bottle in the next day or so, leaving the top few centremeters before the scum behind. Hopefully totally cutting off the Oxygen will fix the problem, as a friend has the ...

I get most of my bottles from the local recycling centre where I work on weekends. I have no idea what has been in these bottles so I always scrub before first use. No scrubbing required after that though.

I would buy a new one, as one lost batch wastes almost as much money as the shiny new fermenter would cost.
