too bitter ? bah humbug.
though when I looked back at notes with morgans or coopers traditional draught it was far more bitter.
it's a bloody nice kit+ recipe champ.
just throw in 3x cascade plugs instead of 1 for dry hopping muhaha.

As a rule I try to match the amount of fermentables in the boil to the amount in the finished batch. As follows:

24L batch of beer with 3 kilos of malt, if I am doing an 8L boil then I will add 1 kilo of malt to the boil. This makes it easier to calculate IBUs and adapt recipes etc because the ...

about ~2 years ago i did a couple of the coopers cerveza.
I found also that the bubbles were large / gassy etc.
1st with brew enhancer 2 as coopers say,
and 2nd with mostly malt + dex + hersbrucker hops.
Imo this beer don't need any extra body for the style.

My .xls notes say it was nice but ...

Interesting Idea with the raisins.

I am led to believe that some of the yeast in
ye old schoole ginger beer comes off the raisins. ?

I don't understand how fridging can present a direct contact exposure
to the water ?
It would seem hard for bacteria to permeate the plastic. ?
unless your not using properly sealed water container(s) in the fridge.

Of course their may be pathogens on the outside of the container and

I don't mean to dampen the event, just trying to help.

First I'd never trust reused caps even through a capper.
Get a capper if you wish or use the Grolsch,
I find capping a rather satisfying part of the process.

That sounds like a fair bit of hops for a kit mod.

Something to keep in mind though - is the gravity of the boiling solution,
when calculating hop utilization.
The efficiency goes way down if you are only boiling say 1/2 the total water with all the extract(s ...
