Re: Timothy Taylor Landlord
Doc,
Is there a ready substitute for carabohemian? A combo of munich and crystal, or melanoiden and a light crystal?
Cheers

Latest batch is on tap now.
97% Maris Otter (Thomas Fawcetts Floor Malted)
3% Weyermann Carabohemian
Fuggles @ 60 (adjust this to achieve a total of 30 IBU)
1g/L EKG @ 20 mins
1g/L Styrian Goldings @ 0 mins (and not the kiwi version which is rubbish)
WY1469
Mash at 66C.

Yep, I've seen that recipe and some of it looks good and other bits are a bit of a concern...
I rarely use more than 5% as crystal or cara malts in an APA grist especially if I'm using a "darker" base malt such as MO.
I agree that Magnum is more like the real thing - and possibly Perle too but I ...

Re: How to carbonate kegs
Hey all
I've got my keg of dopplesticke carbed up nicely now after setting the reg to serving pressure and keeping the keg at 5C. If I now disconnect the gas from that keg will the CO2 stay in solution and the beer continue to pour well? Just seeing if I can save on gas (using a sodastream bottle ...

Re: What are you brewing?
1005 seems a tad low, i assumed you mashed VERY low.
I dont have the numbers in front of me but i reckon it stopped above 1010 mashing at 63/4
I was aiming for 63 and mashed in at this temperature but then a stack of things kept me away from the mash tun for the next hour or so and when I got ...

Re: Fixing a Coopers Sparkling Ale clone
Thanks for the feedback, PaleAle and Bum. Dry hopping does sound like a bad option. Actually, I think I'm getting more used to the beer, and CSA is quite a bitter beer (but also well balanced). I'll learn to be more careful with this hop in the future!
Cheers

Fixing a Coopers Sparkling Ale clone
G'day all
I put down an AG Coopers Sparkling Ale clone a few months ago, hopped with Super Pride hop pellets (29.7 IBU-19IBU FWH, the rest a 20 min. addition). I've just started drinking this out of the keg and, um, well, I don't like it very much. It looks terrific but it has quite a pronounced ...

Re: Lots of head, but no beading
17 psi at 8 degrees will eventually give you 2.59 volumes of CO2. Pretty standard middle ground for carbonation.
Thanks for that chadjaja. The beer is a Coopers Sparkling Ale clone, so I'm hoping that will be about the right carbonation for that. I actually tried a glass of it earlier on tonight ...

Re: Lots of head, but no beading
Thanks for that chadjaja. Makes sense. I've just turned the fridge up a bit to try and speed things up a bit.chadjaja wrote:Give it another week. One week isn't long enough even at 17psi because the rise in your fridge temp at 8 degrees means you need more gas to carb it.

Lots of head, but no beading
Hi folks
Apologies in advance if this has been covered before on this site but I have had my keg in the fridge carbing up at c. 17psi over the last week and while I get beer out of the tap okay, I'm getting too much froth (which subsides soon enough) and a fairly flat beer with virtually no beading ...

As the message title suggests. I'm asking $50 ono. Pick up only I'm afraid (you always wanted a good excuse to drive up to the beautiful Northern Tablelands didn't you? And the autumn leaves are lovely right now!) :) The lid doesn't have a pressure release valve but I've just pushed the ...

Re: Oktoberfest recipe
IMO Jamil is a crystal loving freak but that said he used yankee crystal which isnt as sweet as ours (apparenlty).
My last Okky was vienna with about 3% caramunich and i found it too sweet. Just enough carafa to get the colour would be a better option.
If you had enough malt then i would be gong ...

Re: Oktoberfest recipe
I'd personally drop the caramunich and up the IBU to at least 20 (my pref would be at the top end - 28)
Thanks Doc. I'm in two minds about the Caramunich. I guess there should be enough malty sweetness from the Munich and the Carafa should give that little bit extra colour and edge so perhaps it ...

Oktoberfest recipe
G'day all
Well, as most of us in south-east Oz are now well and truly aware, winter is nigh and I'm feeling the urge to get some lager brewing done. This is an Oktoberfest/Marzen recipe I am about to brew up. Feedback appreciated. The yeast is W34/70 that I have just got going in a 1.5 litre ...

Re: What are you brewing?
Decoctions apparently improve your efficiency - at least i have read that somewhere.
His point re acid rests is worth noting in particular. I used to do this until I forgot once and my standard Oktoberfest was noticeably smoother and fuller.

Re: Poor efficiency
The last 2 batches i have had big changes in efficiency.
Only 2 i have ever adjustng the water profile!
AIPA that i added CaSO4.
Stout that i added CaCO3.
AIPA dropped to 60%, Stout about 65%.
Usually i am a reliable 70%.
Seems Adelaide tap water was doing good things for me and now i have ...
