Fixing a Coopers Sparkling Ale clone

G'day all

I put down an AG Coopers Sparkling Ale clone a few months ago, hopped with Super Pride hop pellets (29.7 IBU-19IBU FWH, the rest a 20 min. addition). I've just started drinking this out of the keg and, um, well, I don't like it very much. It looks terrific but it has quite a pronounced and almost astringent bitterness. It seems to me like I overegged the hopping :( . I was wondering if I could try and fix it up by dry hopping the keg (after degassing it) with some Styrian Goldings, say, 10-15gms. What do you think?

hi Neil,

maybe use it for black and tans?

there's not too much more you can do unfortunately. dry hopping is not going to stop the underlying bitterness from coming through especially if it is as pronounced as you say.

I have no experience of this so someone more learned than myself might want to step in here but would it be possible to blend with something overly maltly (though not dissimilar) to even it out somewhat?

I guess if you degas it and if you haven't filtered out the yeast, you could add a malt extract and water solution..would help to dilute the bitterness and add sweetness.

Thanks for the feedback, PaleAle and Bum. Dry hopping does sound like a bad option. Actually, I think I'm getting more used to the beer, and CSA is quite a bitter beer (but also well balanced). I'll learn to be more careful with this hop in the future!
