Hey Guys,
I made the mistake of rushing one of my last brews and inadvertantly mixed in double he sugar content i should have.
I bought 2kgs of Coopers brew enhancer and 2kgs of brewiser liquid sugar from Big W and 2 cans of Coopers Mexican Cerveza. Reason i bought that much is i have 2 60 litre fermenters and wanted to also put down a wheat beer but there wasnt one there.
So when i got home i wasnt thinking and mixed it all into the one batch... is there anything i can do to rescue it? Or should i just leave it a bit longer in the fermenter before bottling and then leave it for a lot longer?
Cheers,
Nik
Rescue - Mexican Cerveza over sugared
Re: Rescue - Mexican Cerveza over sugared
What volume did you make it up??
It may be lacking in body and somewhat high in Alc%, but still drinkable.

Re: Rescue - Mexican Cerveza over sugared
I only filled it up to 46litres... should i have added more water to it?
so by lacking in body will that make it some what dry?
i can live with that.

It doesn't seem like a major drama, should be fine.
"Lacking in body" is different to "dry", if you want dry you should use dry enzyme but I think you will struggle to find any here that actually recommends that. Cerveza lacks body by nature but you have some coopers BE in there which will have some malt and/or maltodextrin in it depending on which one you got. This will add some body to your brew. The extra liquid sugar (is it just glucose) will increase the alcoholic content. I would not add more water as you would end up with a beer that really was lacking in body.
As the saying goes, relax and have a homebrew.
Cheers
