specific gravity

hey all just got a qestion! put on a brew the other day and the start gravity was 1070 messured in the tube but for the 1st time i have sent the air lock on a long trip and put cling wrap over the fermenter so i can finally see my brew bubbling away. I put the hydrometer in fermenter and instead of reading 1070 it only read 1040 so whitch one do I use to work out approx ALC / % hope you can help thanks

This is a common problem caused by not thoroughly mixing the wort. The answer is - neither. The beer will ferment, don't worry.

Also, if you put the malt mix into the fermenter then top up with water you'll end up with concentrated liquid in the tap, which will give you a false high reading. No amount of stirring will fix this.

It's always a good idea to discard the first tube of beer/wort you pour from the fermenter when doing an SG reading. This allows for the concentrated stuff that sits in the tap to be ignored.

yeah i do pour a bit out 1st it is most prob that i havent stired it up enough thanks for the replies i'll just keep an eye on it and bottle once brew has settled down its pritty aggressive at the moment lol
