liquorice extract

Post by nogga »

I am looking at brewing a beer with similar characteristics of a Kilkenny. Just wondering if using liquorice extract to get that creamy stout like head would affect the taste too much to be an option ?
Cheers

i have brewed a dark ale (was made to a stout recipie but diluted further) with 25ml of liquorice extract. The extract adds a liquorice/nutty aftertaste which is quite noticeable and really effects the final product.
If you are just after a bigger head there are a few additives which will help (I have heard that brewcraft 'big head' works well...don't know if this is just maltodextrin or not though).

maybe a lower qty. of liquorice extract might work for you but i'm not really sure as i've only ever done the one brew with it.
