Well i put the batch on.

1.7kg wander belgium lager
1kg DLME
200g maltodextrin
muntons dry ale yeast
12g Tettenanger teabg steeped 10 mins added to fermenter

pitched yeast at 26
OG:1046

Checked this morning bubbling away nicely.

I was wondering if anyone could give me a hand with my hop choice as well - I'm going to try a dark bitter, kinda Toohey's Old style. I've got a Beermaker's Old kit, and I'm going to add a mixture of dried dark malt extract, dextrose and dried corn syrup. I'll be using Safale yeast also.

I've bought Pride of Ringwood hop pellets for the bittering, is this a good idea? I like fairly bitter Australian-style beers, but I don't want to overdo it. Any tips for boiling these up (duration, etc.)?

I also wanted to use some finishing hops, but I think this could be going over the top. I was thinking of using Fuggles. Good or bad idea?

I'm not that experienced with using hops so any suggestions you guys could offer would be appreciated muchly!

The Kit is already bittered, so unless you want a highly bitter beer I don't think it necessary to add additional bittering hops.
If you are trying to make a similar to Toohey Old then the aroma and flavour hop would probably be Pride of Ringwood hops, boil or steep in boiling water for a few minutes. Fuggles IMHO would be a nicer hop to add rather than POR.

I'm thinking I might finish with both Fuggles and Goldings, to give it more of a British Ale aroma...
