OK, so on the fly i picked up a Coopers English Bitter and 500g of crystal malt.
Also have some Fuggles and 2kg of LDME at home....
Anyone have any ideas of a good recipe for this batch, especially for an ESB-style brew?

Can't help you with kit or extract brews for an ESB, as I've never made one using that method.
I've only ever brewed an ESB or Best Bitter as AG brews.
I've just trawled through my BeerSmith records, and the best ESB I made used Maris Otter, Munich, Crystal, Rye, and Chocolate malts. Rather too complex to convert to a Kit or Extract recipe. Oddly enough, I used only B Saaz to 50 IBU, and my notes show it was delicious.
Have a look at this link. The second recipe, Lord Crouchback's is an ESB, and it contains details for an Extract version. It might be of some help.

Cheers, Warra. It's not exactly Bitter weather, but good brewing weather for it... would go well to brew then cellar until the cold returns.

Like Warra i cant really help out with a kit recipe.
My 2 c.
Dont use Fuggles in a lighter coloured/flavoured english ale. Keep it for dark ales/porters and stouts.
For an ESB i would use EKG, challenger, maybe stryian goldings.
