G'day KEG, I actually used an S04 dry packet for this one.

I actually do have a packet of Safbrew T-58, the HB guy told me it was for high % brews....... I've been wondering what to put it in. I'll give that a crack.

yeah, could've worded my post better - i made it because i noticed you only used S-04. that's why i said it probably tastes like a strong british ale more than belgian (but i bet it's still damn tasty!)

I think that a good Belgian yeast is key to this sort of stuff. The T-58 is a reasonable dry yeast if you cannot be convinced to use a *cough* proper *cough* yeast.

As an aside, the T-58 works well for mead, too...
No Mash Tun. No Chill.

No confirmed fatalities.

Hey Lethal just to confirm you do boil all the hops for 40 minutes? Also how much water do you use in the boil?

Yes you do boil all the hops for 40 mins along with the malt, honey and sugar and steep the grains while you are boiling the rest, i went for about 4 litres in the boil from memory. :wink:

I did a full-volume boil when I made this - having badly scaled up to 23litres (got proportions of honey and sugar wrong).

I think that your boil volume will change what your hops do slightly, but given (IMO) this is more of a yeast-driven beer, it doesn't matter too much.

It was the first time I had used a liquid yeast and I just pitched the smackpack into the wort and walked away. No need to get scared by starters, erlenmeyers, stir-plates and stuff.

In retrospect, the perfect introduction to the liquid yeast culture... :roll:

I would go with about 100gm depending on what temp the brew is at but this is going with about 18*C :wink: :lol:

24*C 109 gm dex
so you take your pick but either way you will be fine..

Best advice is relax and have a homebrew :lol:

Thanks Heaps Lethal. Cracked my first one open today after a week in the bottle ( could not wait ),

Tastes good to me and has good carb already. Not sure what its meant to taste like but very happy with it.

Looks great Boonie and thanks for the pic, mine were up around the 9-9.5% and yeah either way they do have a habit of kicking you in the arse if your not careful, the thing i love most is that first sip and the warm sensation you get as it makes its way to your guts, mmmmmmmm :lol: :wink:
