Hey Guys,

I had a look at my stocks and all I have left are 2 Coopers Canadian Blonde Kits and 1 Toohey's Lager kit.

I also have 3 BE2's 3 BE1's about 2 Kgs LDME and a whole bunch of Cluster, Cascade, Williamette, Hersbruker and Saaz hops

I am also heading to the HBS today.

I have never made the Canadian blonde, so I was hoping someone could give me some receipe idea's before I head to the shop? :lol:

Both blonde cans, a kilo of LDME, hop it up with a bit of cluster or willamette and top up to 20 litres or so for a Duvel like strong beer or bockbier/doppelbock.

I'm sure there'll be plenty of advise to the contrary. Anyway, a few ideas to start you on research into toucan (two can) brews.

Anyone elso got an idea for a Dark Ale/Real Ale toucan?

Mmmmm, Toucan Canadian!!!!

I made up the canadian blonde to a recipe from coopers a while back.
Canadian, BE1(or BE2), 500g lite malt, 20g goldings.
Turned out fantastic after 3 months (about the time I downed the last longneck)

1 cam of Coopers Canadian Blonde
500gm dextrose
500gm LDME
500gm of Yellowbox
AND15gm of Cascade to finish it a give a nice citrusy nose (you could also use Amarillo)
Bulk prime buit only at 7gm per litre not 8gm.

Leave 3 months in bottle. Cool to very, very cold,drink and think Oh My God how good is this????

I made a nice Canadian when using kits,
Kit
1500 Pale Extract
250gm Honey
300gm Dex
and some crystal, can't recall qty though.
made upto 19lt.

I racked onto a hop tea of Cascade and some pasteurised(sp) blueberries, about 750gm I think.
If you want to rack onto fruit just get some muslin from Spotlight or similar, some undyed string, make a bag, throw your fruit in a saucepan with some water, bring it up to the correct temp, ( 70*C is it ? ) simmer for 30min or so, cool and transfer the whole lot to the secondary and then rack onto it.

That's how I did it anyway.

My Canadain Blonde was as follows
1.7 Kg Coopers Canadian Blonde + yeast
1.5 Kg Coopers Light Liquid Malt Extract

3 weeks after bottling its too sweet, can i expect this to go away after awhile?

500 is a lot of honey imho, it'll calm down after awhile though.

I used 500g Yellowbox in a wheat awhile back, and now its better, it seems the overpowering nature of the honey will dissipate over time.

That said, I won't be using it for awhile in any of my brews - too many taste of honey.

I ended up doing the following,

2 x Canadian Blonde Kits
2Kgs of Coopers BE1
500Grams of LDME
250Grams of YellowBox
24Grams of Cluster
50 Grams of Chech Saaz
50 Grams of Hersbruker (spelling)
250 Grams of Crystal

Boiled up 4 litres of water, added the cluster, left for 15 minutes added to sugars, left for another 15 and added the Saaz and then the Crystal. Left for 5 minutes and then added the Hersbruker, took off heat and added the Kits -
added filtered cold water up to 45 litres and then added 2 Safale 04 packets at 20 Degress,

Anyone have any thoughts on the above - taste wise? BTW I love Hoppy beer

Sounds good. I initially didn't see the 45L and was like: :shock:

Cluster: IBU 9
Saaz: IBU 3.5
Hersbrucker: IBU not much

Alc/vol about 5.7%

Sounds pretty balanced, should be tasty. :)

Toucan........ cha cha cha ....... Toucan ......cha cha cha

Boil 1 can with 7L of water for 60min.
At the 30min mark add 35g cascade
At the 10min mark add 250g honey
At the 0 min mark add 25g cascade

Tip into fermenter
Dump the other tin of blonde into the fermenter.
Top up to 22L

Pitch good dry yeast - S-04, US-56. If you're feeling frisky S-33 :lol:

Ferment at 18-22deg for 12-14 days in primary, if you like whacking your beer in secondary do so for another 10 days.
Bottle or keg.

Try it, you will not be disappointed. You will be ecstatic if you use the S-33.

I just used a Canadian blonde to make a wheat beer and it turned out really well. Seems like a good base for any lager recipe you could dream up. I've got another tin up on the shelf ready for my next brew and I'm thinking:

200g of Crystal steeped in 1.5L at 66-70C; strain and sparge with 500ml of hot. Boil up strained crystal extract with 500ml of rice malt and 500g of dextrose. Add 12g Hallertauer hop teabag and flame out and mix in the Canadian blonde kit contents. Add to fermenter (hop bag too) and top up to 23L. I'll probably use a saflager yeast for this one.

The honey may sound a lot but it fully ferments so leaves no residual sweetness, this comes from the malt.

Give it 3 months in the bottle and it will round out and mature and the hops will come thru and you will have a great drink.

BTW if you really concentrate on the flavour you will get honey undertones but it willl not be apparent initially.

The guy in the HBS looked at me strange but I put down a coopers canadian blonde with a 1.7kg can of coopers wheat malt. It has turned out great (better than coopers pale ale ever has) as far as I'm concerned. I love a wheat beer though. To be honest I don't know what a canadian blonde should be like. What can I buy from the bottle shop that is a fine example of a canadian blonde?

Hey Gibovski. Yeah I just did a Canadian blonde with a tin of coopers wheat malt , a bit of a crystal malt steep, 2 Saaz hop teabags and us-56 ale yeast and its a great drop. Incredible head retention (like foam) and a refreshing tart flavour. The only problem is it goes down so well that I'm running out fast.

The Canadian Blonde megaswill of choice over in BC is Kokanee. Drank many a slab of it while I was over there with my mate on a skiing trip. Froze a slab of it on the balcony when we were staying in Banff! -40°C. :shock:

I ended up making real mongrel style out my tin of Blonde. It's not blonde anymore and the hops profile is very continental. Went like this.

Steeped 200g of cracked crystal malt and 50g of cracked chocolate malt in 1.5L of 35C water for 30 minutes and then brought it up to 66C and left it to steep for another 30 minutes. Strained and sparged into the brew kettle with another 750mls of 80C water. Added 500g of liquid rice malt (cleaned out with 250mls of boiling water) and brought to it the boil. Put in 10g of Bavarian Saaz hop pellets and bolied for 20 minutes. Added another 10g of the same pellets and boiled for an additional 20 minutes. Dissolved 1kg of Cooper's BE2 into the wort and flamed out and left to cool for a few minutes. Strained into fermenter with Canadian Blonde kit contents (cleaned out with 250mls of boiling water) and topped up to about 24-25 litres. Chucked in a Hallertauer hops teabag steeped in 3/4 cup of boiling water for 10 minutes. I had a lager yeast available but chose to save it for another project so I pitched the kit ale yeast at 24C and took it out to the spare room. I'm going to ferment at 16C-18C. Probably gonna take a couple of weeks.

Definitely a brunette now with addition of the choc malt. It's ain't no a Koelsch but it's definitely going to be a Germanic/Czech flavoured ale.

Strawberry Blonde

Coopers Strawberry is one of the best beers I have made. Very nice mouthfeel, flavour and aroma.

I have done many Coopers Blonde's as it is easy to alter taste IMO.

One simple one I am drinking tonight is
Coopers Blonde
1 Kg LDM (Coopers)
SG 1040 FG 1010
4.6%
Racked after one week and Dry hopped with 16g of Amarillo.

Lovely quaffer and nice and simple.

I like to make a few simple beers that are nice so I can experiment with others.

I'm doing about 8 Schooners a night at the moment and I need to keep the stock up. :wink:

i know its an old thread but... just cracked this one today, did it to replenish stock after a major cull of beers primed with sugar,
1 can coopers canadian blonde
160 gs corn syrup
250 gs ldme
450 gs dextrose
15 mls improzyne
racked after 15 days, 1 tblsp perle hops and 1 tblsp hallertau hops dry hopped into secondary, bottled after a week with 190 gs of ldme.
very pleasantly surprised at the gruffness of this beer. considering how this was meant to be a stock filler i am majorly impressed at this gruff little cheapie. warm regards, heathen
