A friend of mine dropped in to the workshop with 4kgs of fresh cherries and suggested that we do a brew with them
Which I immediately agreed on
Now the debate starts
Some have suggested doing a cherry porter
This to me would defeat the cherry contribution in the final wash
I suggested doing a lightly colored ale use the cherry in a depiped blanched mashed form put into the bottom of the fermenter whack in the wort add a ester yeast strain let it ferment out then add a brettanomyces and lactic culture and see what happens
