Simple cider

Hey all,
Does anyone brew a naturally fermented cider? I've just tasted my first attempt. Here's how I made it:
~15kg pink lady apples, run through a juicer whole (pips, skin & all)
Tipped into fermenter and leave for 3-4 weeks
Filter (or at least attempt to filter) into keg
Came out quite nice. Slightly on the sour side, but drinkable nonetheless.
