Kreik & Framboise

Postby matr » Friday Oct 02, 2009 11:22 pm

Hey guys, Has anyone had any success producing one of these???

Obviously no one would have produced a lambic style but has anyone successfully produced a decent one in ale form?

The Mrs loves them and if I can make something that is similar then I'm on a winner.... :D

Cheers, Mat.

Wyeast sell mixed cultures of bacteria and yeast to replicate this stuff. Sour beer geeks seemingly brew them regulalry. It can definitely be done.

This might help if you have time to listen (if you haven't already)

The closest I have come is strawberries in a clean blonde ale, and that all went very well. I plan to start messing with funk soon, and will dedicate a set of equipment to brett/bugs.

I've done a raspberry wheat beer. It came out quite cloudy and took about 8 months for all the flavours to balance. It's quite nice, but I can't really drink more than one in a session. Here 'tis:

Bacchus & Barley Wheat Beer Kit (probably sub in a Morgans kit as they are a bit easier to get)
800g dried wheat malt extract
1kg frozen raspberries blended, seived and simmered with the dried malt extract.
K-97

Made to 23l. Cheap and cheerful.

Thanks for the tips guys.

First step I guess is finding cheap fruit in bulk. I'll have a look around and if I find some then I'll have a crack.

The frozen raspberries I used were really cheap... I think it cost maybe $10 for a kilo?

Did a Blackberry wheat beer a while back. Receipe at http://www.homebrewandbeer.com/forum/viewtopic.php?f=11&t=4764&st=0&sk=t&sd=a&start=20

Was a good beer for summer.
Sounds like Beer O'clock.
