I have a Morgan's Wheat to put down with the tin of Wheat Malt

Was thinking of adding some honey, I have 500gms of Coolibah honey

Am interested in opinions, is it too much, not enough ? etc

I've just racked the same recipe BP & I used 325g honey in that one with some hallertau hops & it worked out fantastic...500g might be a little much but if you're not putting any Dextrose in it, that should be fine...sounds like a goer mate...let us know how you go!

I've only used 300g of honey in my brews, thats plenty for me.

Jack,

what has honey got to do with dextrose? Dextrose does not impart, or even affect honey flavour in beer???

I'd be inclined to hop it a bit more...but I really like BIG beers.

Wheat beer? Nah not my style. I'd still hop it more though. (It's the beer talking now!)

It wasnt so much what it had to do with dextrose, I figured the extra honey would be a fermentable like dextrose, is this not correct?

Honey is a fermentable just like dextrose and IMHO adds a level of complexity to your brew. I cannot comment about wheat beers becuase I don't like them (and can't understand what the fascination is with them) but I have used honey in porters and even in a lager and it has adeed an extra level to the taste.

Speak to Dogger, he's the honey expert.

So my assumption is corrrect that honey is a fermentable & the extra amount would compensate for not adding any dextrose?

Pretty much so Jack but when I've added it I've either used a kilo of malt or malt/dextrose/maltodextrin mixes.

It does up the alcohol content, but I'd still be tempted to use about 600 to 700gm of dextrose as well.

Jack,

If using honey, I'd do as Wassa said. I personally think that honey makes the beer a bit low in body if no other fermentables are used. Honey gives a great flavour, but I would just accept that your beer will be a bit higher in alcohol if you want to use it.

It's done .................... put it together this morning, used 500gms of honey

A few panic attacks when my brew fridge didn't fire up!

Fridge going, fermenter at a happy 19 deg C ................... all is good in the world
