Did you use the supplied yeast? I think I had the same when I brewed that can up too, and also read other people had the same. TO be honest I wasn't impressed with the brew even after a year, tipped 15 bottles of it last week. Hopefully yours comes out ok for you!

I did the Hightail version with goldings hops and just the kit yeast. Turned out fantastic, loved it early on as there was a nice caramel toffee flavour going on. After 3 weeks it seemed to lose that flavour though, still a lovely drop though, one of my better ones.

I was talking about a correct measure teaspoon not one out the cutlery drawer! Think the measure is just under 5gm. If I'm priming an ale I tend to throttle back a tad as Warra mentioned.

I use a teaspoon of either in my 750ml's. Carbs up nice in most brews after 2-4 weeks.

Am thinking of giving the following recipe a crack over the weekend. It's from the Brewcraft International Classics pdf.
1 can of Premium Imported Irish Stout
170g Choc grain
200g Roasted Barley
500g Dry Wheat Malt
500g Dark Dried Malt
15g Goldings at 5 mins
SAF-04
18L in total.

Well it's only been in the bottle for 2 weeks but the bottles had firmed up and couldn't resist trying to see what it was like.

Currently in the process of making a Hogoblin clone:
1 Can Coopers Draught
1KG LDME
150g Dextrose
100g Crystal steeped
50g Chocolate malt steeped
20g Fuggles for 30 mins
10g Goldings for 5 mins
5-10g Goldings dry hopped, chucked in with the yeast.
S-04 yeast
22L in total.

Thanks Wassa. I used Dark Dry Malt in the recipe. Bottled it last night and it was dark brown as you described, I always thought porter was black like stout so learnt something there. Guy's, what colour is your beer coming out at?! Just took a reading and it is down to 1016 after 2 weeks, think it's done. Cheers Wassa, I went with a Manuka honey in the end, just added it at the end of my mini boil. It's been in the fermenter for over a week now and looks almost done, will be bottling it up at the weekend. Will let you know how the first tasting goes!

I couldn't see in the thread which yeast you went for in the end, was it just the coopers kit one?
Now I just have to be brave enough to give that crystal stuff a go, another level up in the never ending home brew difficulty scale!

Yeah,sounds good to me mate. My brews usually bubble nicely for 3-5 days then slow down to bubbles every minute or even less after that. I tend to leave it for 2 weeks and take my hydrometer readings at that point to confirm it's done.

ok, so once Wassa's Honey Porter has completed fermenting I'll be onto brew number 10! I've mainly been doing kit+kilo type brews so far but substituting in enhancers rather than using dex. The last 2 brew have seen me use LME and DME for the first time and I think I will carry on down this road due ...

When you pitch on to an existing yeast cake do you have to do anything special with the cleansing? Usually once I finish bottling a brew there is a ring of scum around the top of the fermenter where the krausen was, is it ok to leave that or does it have to be cleaned? If so don't you risk cleaning ...
