I don't know if any of you guys frequent the other homebrew boards, but on one of the other sites the head brewer from Mad Monk mentioned that he has left them due to personal reasons. Drop them a line as they may be chasing a new head brewer! :wink: Cheers

Hi TommyH, in the city there are a few good pubs that sell mainly Aussie and Pommy beer on tap.(Rosie O'Gradys, Moon and Sixpence,). The Belgian Beer Cafe in Murray street. Hope that they may get you started. Cheers :)

Ash, you could use US-05 (US-56), it has a tendancy with honey or fruit to finish off a bit dry! Cheers

Banger,
When I dry hop I usually add them once fermentation has ceased. As I don't rack to a secondary I leave them for 3-5 days with very few problems. Cheers

Hi Pale, I think Chris meant pasteurise. You can do that by putting them in a bag and place in a pan of hot water for 15mins at approx 80c. That way you won't be adding any water. :) Cheers

Rinse well with hot water when emptied, dry, cap, ready for refilling. I don't sanitise the bottles prior to filling, found it a waste of time and peroxide. 8) Cheers

I've used fruit in Ale's in the past and have always used US-56. I find that it ferments out the brew better that some of the other Ale yeasts. :wink: Cheers

I've always used stockings for hops. Can't be stuffed trying to clean them, I just throw the lot out and use a new one next time. They are not that dear and depending on what style you buy you can get a few out of a pair. Cheers[color=darkred][/color]

I made a stout aroud 9%. The yeast is was suggested to use was Muntons Gold Premiun Yeast and it work out fine. Cheers

Hi B32, 9-10c will be fine for a lager yeast. Should take approx 2 weeks to ferment out, but don't forget to check your gravity as it may take a bit longer. Cheers :D

Timmsy, try this. I have just bottled this and it is very good.
8x2.4ltr Long Life Apple Juice
1kg Raw Sugar
.500gm Dextrose
.300gm LDM
200gm Lactose
1 Satchet Lalvin Champagne Yeast.
Bring 1 ltr water to the boil with fermentables and Lactose, add cooled Apple Juice and fermentables and pitch ...
