Beers for Sydney

Hi,

This is my first winter home brewing and with Sydney finally hitting winter in a big way I'm wondering what types of beer I should be looking at brewing.

My main concern is that Sydney doesn't really get below 6-8 degrees so I'm not sure whether it's cold enough for some brews.

Finings

Hi,

In my first batch my instructions said to put finings in when you add the mix/hops etc. However now I'm worried. Will that have destroyed my brew?

I only ask cause I'm about to put another one down and don't want to make the same mistake twice.

Bottling - Clear Bottles and Twist Tops

Yo,

With bottling I've been told by a friend;

a) Not to use twist tops

b) Not to use clear bottles

Just wondering if anyone could tell me whether this is true from experience and if so why. I have a thousand TED bottles I'd been saving up to use and was devastated when I was told this news ...

Hi,

I've just put down my first ever batch but am wondering about how to use a hydrometer to tell when my beer is fermented and what else I should/could be using my hydrometer for.
